Easy Whole Wheat Pasta Salad with Chicken and Veggies Recipe

I am finally in a position to eat carbs again. After not eating carbs for almost 3 weeks, my body was craving everything from candy to french fries. I wasn’t in the mood to go grocery shopping so I started going through my refrigerator and pantry to see what I had and decided to give this carb satisfying, but healthy meal a shot.

Ingredients:

1-2 cups Whole Wheat Rotini Pasta

1-2 whole boneless skinless chicken breast

1 zucchini

6-10 grape tomatoes

2 green onions

2 cloves of garlic chopped

1/4 tsp of paprika

1/2 cup of low fat balsamic vinaigrette dressing

Directions:

  1. Preheat oven to 400 degrees
  2. Season chicken breasts with garlic and paprika and stick in oven for 20-25 minutes
  3. Boil pasta while chicken is in oven
  4. Cut zucchini into 1/4″ cubes or into thin strips
  5. Cut grape tomatoes into 1/2’s or 1/4’s
  6. Slice green onion and chop
  7. Put veggies to the side
  8. Remove chicken from oven and cut into 1/4″-1/2″ chunks
  9. Drain and rinse pasta
  10. Place all ingredients into a mixing bowl and pour dressing on top and mix together

This dish can be served hot or cold. After I serve it hot the first night, I prefer it cold the next day just to save myself some time on having to make another meal.
